The Michelin Stars, awarded to seven restaurants in Turkey this year, are presented by taking into consideration five criteria: quality of ingredients, harmony of flavors, cooking techniques, reflection of the chef's experience in the kitchen, and consistency among the inspector visits.

The seasonal menu formed in Arkestra by Chef Cenk Debensason, who has an international background, has been inspired by Modern European cuisine, bringing together tastes from our land and other places.

In his speech during the ceremony, the Michelin Guide International Director Gwendal Poullennec gave information about the selection process, saying, "Our inspectors were once again mesmerized by Istanbul's culinary choices this year. Istanbul, a world city with a composite culture, has a rather profound gastronomic panorama stretching from classic Turkish taverns to trendy or international restaurants, as well as cozy restaurants offering a total culinary experience. The 2024 Selection, which includes 24 new restaurants spread across the country including the two new Michelin Stars, reveals the rise in the gastronomy standards led by a generation of brave chefs who are also proud of their traditions."
